Organic corn is reliably sweeter and tastier than conventionally-grown corn. Maybe it’s because we nurture the soil which in turn nurtures the plant. The one drawback seems to be, for most, finding the little worm inside (which is completely HARMLESS). These worms are called corn earworms and are a big headache for us farmers. If it’s not the worm eating the corn, than we also have birds that peck at the corn to eat the worm! You might notice your corn ears have been pecked on the top. Either way the corn itself is fine to eat. Please just peel back the husk slightly before you put the corn away and cut off the affected section of the ear.

One-Pan Chicken with Zucchini and Corn

Ingredients:
3 Tbsp. olive oil, divided
3 Tbsp. unsalted butter, divided
1 cup chopped onion
12 oz. zucchini, cut into ¼-inch thick rounds
1 cup fresh corn, cut from about 1 ear of corn
1 tsp. dried oregano
1½ – 1¾ lbs. boneless, skinless, chicken thighs
⅓ cup shredded Parmesan cheese, plus more serving
Fresh basil, thinly sliced
Kosher salt and freshly ground black pepper, to taste

Black Bean Salad

Ingredients:
1 (15 oz) can black beans, rinsed and drained
1 cup corn (1 large ear of sweet corn)
1 cup halved cherry or grape tomatoes (sub red or heirloom here)
1 cup chopped red bell pepper
1/2 cup chopped red onion
1/2 cup chopped cilantro
Juice of 1 1/2 limes
1 tablespoon olive oil
1 teaspoon kosher salt
1/2 teaspoon chili powder
1/4 teaspoon ground cumin
1 large avocado, pitted, peeled, and chopped

Creamy Thai Carrot Soup with Basil

Ingredients:
1 Tbsp (15 ml) coconut or olive oil
1/2 of 1 large yellow onion, chopped
3 cloves garlic, diced
1 pound carrots, scrubbed (or peeled) and chopped (~4 cups)
Healthy pinch each salt and pepper
2 cups (480 ml) veggie stock + 2 cups water (480 ml)
1/3 cup creamy or crunchy salted natural peanut butter (use less for a less intense PB flavor)
2 tsp chili garlic sauce (use less for less spice)
