Week of January 8th

Happy New Year and a new decade. This year I’m working to eliminate as much plastic as possible in my life. That means over the next month we will be phasing out plastic bags and replacing them with paper when possible with our CSA program. We also always ask that you return egg cartons and green baskets if available, but we can not accept plastic clam shells (these usually hold berries) or twist ties for reuse. It’s my goal to get to as little waste as possible with our CSA program. Keep in mind that what goes on behind the scenes is saving as well. ALL the boxes we use to pick your produce in get reused and we only purchase minimally packed produce when outsourcing. The amount of plastic accumulated on the planet is beyond concerning and I hope this can be an outlet for those with the same concerns.
With less and more fragile packaging we ask that you pick up your CSA box with both hands in order to avoid produce from rolling around.

Kale Citrus Salad

Ingredients:
Salad
1 bunch kale, destemmed and roughly chopped
1 avocado, peeled and diced
1 jalapeno, seeded and sliced
1 citrus fruit
1/4 cup almonds, roughly chopped
1/4 cup red onions, thinly sliced or finely diced
1/4 cup pomegranate, or dried cranberries
1 teaspoon extra-virgin olive oil, for massaging the kale
Dressing
1/4 cup extra-virgin olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon Dijon mustard
1 tablespoon maple syrup
pinch of garlic powder
sea salt and black pepper, to taste

Curried Beet Soup with Tandoori Chickpeas

Ingredients:
CHICKPEAS
1 15-ounce can chickpeas (rinsed, drained + dried in a clean towel)
1 Tbsp melted coconut oil (or sub grape seed oil)
1/4 tsp sea salt (plus more to taste)
2 Tbsp tandoori masala spice blend (see notes for DIY/where to buy*)
1 tsp coconut sugar
SOUP
1 Tbsp coconut or grape seed oil
2 medium shallots, thinly diced
2 cloves garlic, minced (2 cloves yield ~1 Tbsp)
1 Tbsp minced ginger
6 small-medium beets, peeled and quartered
1 pinch each sea salt + black pepper (plus more to taste)
1 1/2 Tbsp green curry paste (or sub 12 g curry powder per 25 g paste)
1/4 tsp ground cinnamon
1/2 tsp ground turmeric
1/2 tsp ground cumin
1/4 tsp cayenne pepper
1 pinch each ground cardamom and coriander (optional)
1 14-ounce can light coconut milk (optional // more for serving)
2 cups vegetable broth (DIY or store-bought)
2-3 Tbsp coconut sugar (or maple syrup)
Fresh chopped cilantro (optional)

Crispy Roasted Brussels Sprouts with Toasted Walnuts and Goat Cheese

Ingredients:
Brussels Sprouts:
1 cup walnut halves and pieces
1 ½ pound Brussels sprouts, trimmed and halved
1 tablespoon grapeseed oil
1 tablespoon balsamic vinegar
1 teaspoon maple syrup
½ teaspoon onion powder
½ teaspoon garlic powder
Salt
2 ounces goat cheese, crumbled
For serving:
1 tablespoon extra virgin olive oil
1 tablespoon balsamic vinegar
Fresh mint leaves (optional)
Parsley (optional)

Spicy Buffalo Cauliflower Tacos with Cool Ranch Celery Slaw

Ingredients:
Buffalo Cauliflower
1 small head of cauliflower, cut into small florets (about 6 cups)
1/2 cup + 1 tbsp hot sauce
1 tbsp natural, runny almond butter
1 tbsp maple syrup
1/4 tsp each garlic and onion powder

Ranch Celery Slaw Ingredients:
3 cups of cabbage, shredded or finely sliced (I used a combination of red and green)
2 stalks of celery, sliced
1/2 cup full fat canned coconut milk, gently shake can*
2 tsp of apple cider vinegar
1/2 tsp parsley flakes
1/2 tsp dried minced onion
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp dill
1/4 tsp basil
1/8 – 1/4 tsp sea salt, or to taste
dash paprika
dash of black pepper
