The fruit from our orchard is finally ripening and we are pleased to offer peaches and apricots in our CSA store. Hopefully we will have enough to include in all the boxes soon. It’s been a lot of work to get here but well worth it. We don’t spray our orchards at all – not even with organic pesticides. We aim to keep the soil and the trees healthy enough to battle disease. I think this will offer more nutrients and flavor in the fruit as the trees develop natural defenses. The strawberries don’t enjoy the heat as much so those crops are declining. I’ve seen the first of the cantaloupe and watermelon picked so we’re looking forward to those as well.
Keep an eye out for corn in your boxes this week! Organic corn mostly likely will contain a worm. It’s simply the larval form of an adult moth and will not hurt you. Just plop it in your compost, yard/garden or feed it to your chickens (a special treat). I’ve said it before but I’ll say it again. If insects don’t instinctively want to eat the food that is growing, why would you?

French-Style Summer Potato Salad with Corn

Ingredients:
2 pounds baby potatoes (red, yellow or combination)
Celtic salt and black pepper
1 tablespoon apple cider vinegar
1 1/4 cups cooked corn kernels (1 large ear of corn)
1/2 cup sliced scallions
1/2 cup fresh dill, chopped
Dressing
2 1/2 tablespoons stone ground mustard
3 cloves garlic, minced
1/4 teaspoon Celtic sea salt
Fresh black pepper
3 tablespoons rice wine vinegar
1 tablespoon apple cider vinegar
3 tablespoons extra virgin olive oil

Egg Sage Sausage Stuffed Acorn Squash

Ingredients:
2 acorn winter squash
8 large eggs scrambled
4 sausage I use: Teton Grass Fed Beef Sausage
1/2 white onion chopped
1/4 cup sage fresh
2-4 cups arugula
salt and pepper to taste
avocado oil for cooking

Creamy Fall Soup in Acorn Squash Bowls

Ingredients:
SQUASH
2 medium acorn squash* (halved // optional for use as bowls)
1 Tbsp melted coconut oil (or avocado or grape seed oil)
1 Tbsp maple syrup or coconut sugar (plus more to taste)
SOUP
1 1/2 Tbsp coconut oil (or avocado or grape seed oil)
1/2 medium white or yellow onion (diced)
3 cloves garlic (minced)
4 cups cubed carrots
1 quart vegetable broth (DIY or store-bought)
1 tsp fresh or dried sage, fresh or dried thyme, or 2 bay leaves (amount as original recipe is written)
1 cup red lentils (optional // for protein / fiber)
Sea salt and black pepper (to taste)
1-2 Tbsp maple syrup or coconut sugar (optional // depending on sweetness of your carrots)

Black Bean, Corn and Avocado Salad

Ingredients:
2 cans (14 oz) black beans, drained and rinsed
2 ears of corn, cut off the cobs (about 1 ½ cups), sub with canned or frozen
1 dry pint grape tomatoes (or about 1 ½ cups), quartered
1 large jalapeno, finely diced and most seeds removed
½ small red onion, finely diced
1 avocado (firm, but ripe), finely diced
½ cup chopped cilantro, loosely packed
Dressing
2 – 3 tablespoons olive oil
1 large juicy lime (about 2 tablespoons), juice of
1 tablespoon apple cider vinegar, optional
2 cloves garlic, minced
½ teaspoon cumin + chili powder
salt, to taste
