Week of September 9th

My dear community,

To say it’s been hot is an understatement. Tomatoes are turning into mush on the vine, which the tops of the plants are burning up and cucumbers are cooking in the greenhouses. Luckily we planned ahead and were able to harvest plenty of heirlooms for this week.
The thought that this may be how the future looks for us is a bit overwhelming. Climate change is glaring at us so hard it cannot be ignored. This is just a tiny blip of heat compared to what could be. Nature is very amazing and powerful.
After transitioning from a desk job for the majority of my 20s to farm life in my 30s I’ve experienced inconsistencies in the weather we used to be able to rely on. I’ll be up early tomorrow before the heat of the day picking apples and wilting in the shade towards the afternoon.
If you need me Wednesday afternoon I will be in the Pacific Ocean. Sending lots of love with our boxes as always.

Zucchini Salad

Ingredients:
Lemon Vinaigrette, plus 1/4 cup minced shallot mixed in
3 small-medium zucchini
1/4 cup toasted pine nuts
1 tablespoon chopped chives
Handful of basil
Shaved Parmesan, optional
Sea salt and freshly ground black pepper

Parmesan Zucchini and Tomato Gratin

Ingredients:
1 zucchini, thinly sliced
3 medium tomatoes, thinly sliced
1/2 medium onion, chopped
1 clove garlic, minced
1/4 cup shredded Parmesan cheese
Salt and pepper to taste

Creamy Roasted Red Pepper Tomato Soup

Ingredients:
2 large red bell peppers (left whole)
1 28-ounce can crushed or peeled tomatoes in juices
1 6-ounce can tomato paste
1 cup water (sub up to half with extra coconut milk for creamier soup)
1 14-ounce can light coconut milk (use full fat for creamier soup)
1 1/2 Tbsp dried dill (or sub 3 Tbsp (5 g) minced fresh dill per 1 1/2 Tbsp dried)
1 Tbsp garlic powder
1 tsp dried basil (or sub 2 tsp minced fresh basil per 1 tsp dried)
1/2 tsp each sea salt and black pepper
3-4 Tbsp coconut sugar (or stevia to taste)
1 pinch red pepper flake (optional // for heat)
FOR SERVING optional
Croutons
Sliced tomatoes
Fresh dill
Full-fat coconut milk

Heirloom Gazpacho

Ingredients:
4 medium or 3 large heirloom tomatoes (approximately 2 pounds), cored and coarsely chopped
2 medium red peppers, stemmed, seeded and coarsely chopped
1 large seedless cucumber, unpeeled, coarsely chopped
1/2 small red onion coarsely chopped (1/3 – 1/2 cup)
1 clove garlic, minced
1/2 cup extra virgin olive oil
2 cups tomato juice (vegetable juice may be substituted)
1/4 cup white wine vinegar (or sub apple cider)
1/2 teaspoon kosher salt, or to taste
1/4 teaspoon ground black pepper, or to taste
Optional garnishes: diced avocado, sliced scallions, a small dollop of sour cream or crème fraîche (omit for vegan soup)

Gluten Free Apple Cinnamon Muffins with Crumb Topping

Ingredients:
For the Crumb Topping
1/2 cup Almond Flour
1/2 cup Rolled Oats
3/4 tsp Cinnamon
2 tbsp Coconut Oil softened
2 tbsp Maple Syrup pure
pinch Sea Salt
Dry Ingredients
2 cups Almond Flour
1/4 cup Coconut Flour
1/3 cup Coconut Sugar
1 tsp Baking Soda
1/2 tsp Sea Salt
1 tsp Cinnamon
Wet Ingredients
3 tbsp Coconut Oil melted, or very soft
3 Eggs
1 tsp Apple Cider Vinegar raw, unfiltered
4 tbsp Almond Milk or oat milk, unsweetened
2 Apples cored, peeled and chopped (about 1 1/4 cup)
