Roasted Butternut Salad

Ingredients:
Dressing:
2 tablespoons apple cider vinegar
2 tablespoon extra-virgin olive oil
1 teaspoon honey
1 teaspoon Dijon mustard
¼ teaspoon salt
⅛ teaspoon black pepper
Salad:
1 (1½ lbs/680 g) butternut squash, peeled, de-seeded, and cubed into ½-inch pieces
2 tablespoons olive oil
½ teaspoon salt, divided
⅛ teaspoon black pepper
1⅓ cups (315 ml) water
1 cup (170 g) whole wheat pearl couscous
1 medium sweet onion, diced
5 oz (150 g) kale, washed, de-stemmed, and finely chopped
1 (15.5 oz/439 g) can chickpeas, rinsed and drained

Greek Green Bean Salad

Ingredients:
FOR THE SALAD:
6 oz fresh green beans, trimmed + halved
1/4-1/3 cup chopped red bell pepper
1/4 cup chopped tomato, optional
3-4 TBSP crumbled feta
fresh chopped parsley, to garnish [optional]
GREEK DRESSING:
3 TBSP quality extra virgin olive oil
1 TBSP white wine or champagne vinegar
1 clove garlic, smashed + minced
1/2 tsp fresh or dried parsley
1/4 tsp dried oregano
1/4 tsp dijon mustard
a pinch of salt and pepper

Healing Bowls

(My thought is to sub butternut squash for a sweet potato. add in some cracked black pepper to compliment the tumeric.)
Ingredients:
TURMERIC MASHED SWEET POTATOES:
2 large sweet potatoes, cut into chunks
a swish of olive oil
1-2 teaspoons turmeric
2 cloves garlic, minced
2 cups vegetable broth
LEMON HERB DRESSING:
¼ cup lemon juice
⅓ cup olive oil
1 small clove garlic
2 teaspoons agave
¼ cup parsley leaves
¼ teaspoon salt (more to taste)
HEALING BOWLS:
poached or scrambled eggs
brown rice or quinoa
arugula or spinach or greens
pistachios or other nuts for topping
