Cheesy Spaghetti Squash Pasta

(I tried this recipe and loved it. I used cilantro instead of parsley or basil. I didn’t top it with tomato sauce per recommended and it was still delicious.)
Ingredients:
CHEESE SAUCE
1 cup raw cashews (soaked in hot water 30 minutes, then drained // or sub slivered blanched almonds or macadamia nuts – neither need to be soaked)
2 Tbsp nutritional yeast (plus more to taste)
2 Tbsp lemon juice
1/2 tsp sea salt (plus more to taste)
1 Dash garlic powder
1/4 cup water (to thin, plus more as needed)
1/4 cup fresh parsley or basil (optional)
SQUASH
1 large spaghetti squash
1 Tbsp olive or avocado oil (sub water if avoiding oil)
1 Pinch sea salt
THE REST
2 Tbsp olive or avocado oil (or sub water if avoiding oil)
1/4 cup diced shallot
2 cloves garlic (minced)
1 Pinch sea salt

Cucumber Melon Salad

Ingredients:
1 ripe cantaloupe
1 cucumber
1/2 cup chopped cilantro
1 lime juice

Warm Cumin Roasted Carrot, Onion and Lentil Salad

Ingredients:
FOR THE SALAD
4 carrots
2 tins of green lentils
2 teaspoons of fennel seeds
2 teaspoons of cumin seeds
70g of watercress
2 red onions
20g of coriander
Olive oil
50g of pine nuts

FOR THE CASHEW CHEESE
150g of cashew nuts
1 lemon, juiced
1 tablespoon of nutritional yeast
Salt and pepper
5 tablespoons of water
