My dear community,

We’ve started harvesting our peaches in a big way. We do our best to pick them slightly underripe so they aren’t bruised during transport. Thank you for understanding this is a learning curve for all of us and our aim is to get you the best tasting produce whole and intact. With extremely hot temperatures in Buellton where most of our tree fruit is grown it can be difficult to get things just right. With that said – kindly notify us if something happened to your fruit to render it inedible upon receiving it. We are happy to replace the item(s) with something else available in a future box.

Ultimate Zucchini Salad

Ingredients:
4 medium zucchini
2 tbsp. olive oil
2 tbsp. lemon juice
2 small garlic cloves finely chopped
2 tbsp. chopped parsley
¼ tsp. salt or to taste

Lemon Parsley Cauliflower “Rice”

Ingredients:
1 small head of cauliflower (4-5 cups riced)
3 Tbsp cooking fat (I like half tallow or lard and half coconut oil )
2 tsp lemon zest (approximately 1 lemon)
4 Tbsp chopped fresh pasley
1/8 tsp Salt , to taste

Greek-Inspired Collard Green Wraps

Ingredients:
Lemon & herb quinoa:
1 1/2 cup cooked quinoa
2 tablespoons lemon juice
1 tablespoon olive oil
2 tablespoons Italian parsley, chopped
1 teaspoon dried oregano
1/4 teaspoon salt
Black pepper, to taste
Veggies:
1 bunch collard greens (approximately 8 medium-sized leaves)*
1/2 a cucumber, cut into matchstick pieces
2 cups bell peppers, cut into matchstick pieces**
1 cup baby tomatoes, quartered
1/4 cup kalamata olives, pitted and chopped
1/4 cup red onion, diced
1/4 cup mint, chopped

Thai Peanut Zucchini Noodles

Ingredients:
1 tbsp olive oil or canola oil
3 medium zucchini spiralized
1 carrot shredded
1 tbsp chopped cilantro
3 tbsp chopped unsalted dry roasted peanuts
THAI PEANUT SAUCE
1/4 cup creamy peanut butter use unsweetened if eating low carb
2 tbsp low sodium soy sauce
2 tbsp honey or sugar free syrup or erythritol
1 1/2 tbsp seasoned rice vinegar
1 1/2 tsp sriracha
1 tsp freshly grated ginger
1 tsp minced garlic
1 tsp sesame paste
