Final box of 2021

My dear Community,

Here we are, the last CSA box of 2021. It’s hard to describe the magnitude of gratitude I have for the soil that grows nourishing food, the workers that show up every day and you, the community that supports the movement. These boxes are packed with months of considerable forethought, time and dedication through rain or shine with an abundance of love. John Givens Farm has been growing vegetables since the late 70s and was one of the first to participate in our farmers markets. The farm also has been a big distributor for food across the United States. But as insurance restrictions grow tighter and selling wholesale feels more like an administrative job than connecting with the land, our farm continues to get smaller. We are going back to our roots and having a small farm means we can pay even more attention to the soil and things that are important to us, like using less plastic. So we’ll continue to depend on local distribution like this program to make it work. Thank you for giving our farm this outlet as a piece of our puzzle.

Don’t forget to buy a CSA gift certificate for someone you love. We’ll be on break the next two weeks, but you can start someone’s new year off with a healthy bang – an inspirational box of fruits and vegetables. Look for gift certificates in our CSA store or shoot me a quick email and we’ll take it from there.

Kohlrabi and Carrot Slaw

Ingredients:
1 large kohlrabi, peeled, stems trimmed off, grated
1/4 head purple cabbage, shredded
2 medium carrots, peeled and grated
1/2 red onion, grated
4 tablespoons chopped cilantro
1/4 cup golden raisins (optional) (dates would work too although the vegetables are pretty sweet they way they are)
1/4 cup mayonnaise (I love olive or avocado oil based mayos or greek yogurt works too!)
1 tablespoon cider vinegar
1 tablespoon sugar (sub coconut sugar, maple syrup or honey)
1 teaspoon salt

Garlic Roasted Cherry Tomatoes

Ingredients:
1 (10 oz) containers cherry tomatoes, halved
3 garlic cloves, minced
1 tablespoons olive oil
1/2 teaspoon kosher salt
1 teaspoons fresh cracked black pepper

Sauteed Cauliflower with Caramelized Onions & Spinach

Ingredients:
1 tablespoon olive oil
2 medium yellow onions thinly sliced into half-circles (sub red! they cook up so sweet.)
1 tablespoon balsamic vinegar
1 teaspoon dried thyme
3 garlic cloves minced
½ teaspoon kosher salt
½ teaspoon ground pepper
3 cups cauliflower rice
2 cups fresh spinach leaves
1 ounces about 3 tablespoons crumbled feta cheese
2 tablespoon minced flat-leaf parsley

Roasted Sweet Potato and Beetroot Salad

Ingredients:
1/2 cup Quinoa dry
1 medium Sweet Potato peeled and diced
2 cups Beet peeled and diced
1 medium Apple diced
1/4 cup Red Onion finely diced
3 ounces Salad Greens Spinach, Kale, Spring Mix, etc.
1/4 cup Dried Cranberries lowest sugar you can find
1/4 cup Pecans chopped
1 tsp Cinnamon
3 tbsp Balsamic Vinegar
3 tsp Honey or agave
2 tsp Mustard
2 tbsp Olive Oil, extra virgin
Salt to taste
Pepper to taste

Sweet Potato Mushroom And Wild Rice Soup

Ingredients:
3 tbsp oil
4 cloves garlic
1.5 cups diced celery
1.5 cups diced carrots
1 large yellow onion
1.5 tsp salt
1/2 tsp black pepper
1 tsp smoked paprika
1/4 tsp crushed red pepper
3 cups sliced mushrooms
1 cup dry wild rice
1 large sweet potato
1 can coconut milk
4 cups vegetable broth
1 tbsp balsamic vinegar
