Week of April 5th – Sale on Eggs

Easter is right around the corner. In years past it may have passed right by me, but now that I have a little one those holidays have regained life in my world. In the spirit of hiding Easter eggs, I wanted to send some savings your way. Your eggs are laid fresh in the week that you ordered them. I wonder how long the eggs in the store sit on the shelf before you get to them?

Turmeric Roasted Fennel, Chickpeas and Kale Salad

Ingredients: 2-4 servings
1 fennel bulb
1 can chickpeas (1½ cup)
3 garlic cloves, halved
1tsp turmeric
sea salt
2 tbsp olive oil
large bunch of curly kale
fresh coriander to garnish, optional
Dressing:
1tsp fresh ginger, peeled and grated
2tbsp olive oil
¼ lemon, juice
pinch of sea salt

Spicy Quinoa Stuffed Red Cabbage Rolls

Ingredients:
1 head of red cabbage
110 g (1 cup) of cooked quinoa
45 g (1/3 cup) sunflower seeds
45 g (1/3 cup) raisins
Good handful of (about ⅓ cup) chopped parsley
2 tsp baharat spice mix
Salt to taste
1 tbsp maple syrup
1 tsp water

The Best Shredded Kale Salad

Ingredients:
For the salad and dressing:
2 medium bunches destemmed lacinato/dinosaur kale, finely chopped (8 to 9 cups chopped)
2 large garlic cloves
1/4 cup (60 mL) fresh lemon juice
3 to 4 tablespoons extra-virgin olive oil, to taste
1/4 teaspoon fine sea salt
1/4 teaspoon freshly ground black pepper (just eyeball it)
1/4 to 1/2 cup dried sweetened cranberries, for garnish
For the pecan Parmesan:
1 cup (120 g) pecan halves, toasted
1 1/2 tablespoons nutritional yeast
1 tablespoon extra-virgin olive oil
2 pinches fine sea salt

Blueberry & Spinach Smoothie
(I’ve been crushing on this type of smoothie lately. Add a scoop of vanilla protein powder and you don’t even need the honey. Kid approved.)
Ingredients:
1 cup frozen blueberries
1 overripe banana fresh, or frozen (overripe bananas are extra sweet so less sweetener is needed)
1 cup spinach
1-2 TBSP honey
2/3 cup 1% milk (I use almond milk. If I used cow milk it would be whole milk.)
1/3 cup organic plain greek yogurt
1 TBSP ground flax seed (ground up first)
