Week of December 1st

My dear Community,

With the holiday season here, I wanted to remind you about the gift of health as an option. We aren’t the kind of company that inflates prices to give seemingly major discounts. But as a special offer to you – if you purchase a gift certificate of $100 we will give you a $25 credit and if you purchase $200 we will give you a $50 credit to your account. We love spreading health and wellness to our community. I know firsthand how healing food can be, and you likely do too. On top of that, so many people look to adjust their habits come January so the timing could be great as well. Just give us the name of the recipient and we’ll do the rest. Or we can give you a certificate with a decorative card to hand off as a tangible gift.

We’re happy to welcome back tangerines from Glen Annie Organics. This farm is located in Goleta and the tangerines are picked up on my way to our farm’s HQ and the boxes are returned the next week. It’s not always possible to get fruits and vegetables without packaging, so we support them when we can. Check out the kohlrabi in your box this week! It makes for a really crunchy and tasty slaw or roasts up sweet and tender in the oven. It’s one of those unconventional veggies you might pass up otherwise.

A friendly reminder that we are taking the week of December 22nd and 29th off. We will be resuming CSA boxes on January 5th but you can still find us at the Santa Barbara, Goleta, Carpinteria and Ventura farmer’s markets. I hope you all had a wonderful weekend.

Simple Kohlrabi with Pistachio and Sage

Ingredients:
2 tablespoons unsalted butter
1 clove garlic, minced
2 pounds kohlrabi, peeled and cut into 3/4-inch cubes (about 5 cups cubes)
1 teaspoon coarse kosher salt
Freshly ground black or white pepper to taste
2 tablespoons water, or more as needed
1 tablespoon chopped fresh sage
3 tablespoons chopped salted roasted pistachios

Sheet Pan Meal: Curried Sweet Potato & Chickpeas

Ingredients:
VEGGIES + CHICKPEAS
1 large sweet potato, skin on, cut into wedges (organic when possible)
2 cups thinly sliced cabbage (or sub cauliflower or other seasonal vegetable)
1 (15-oz) can chickpeas, rinsed, drained, and dried
1/2 cup finely diced red onion
1 Tbsp minced ginger
1 Tbsp minced garlic
2 Tbsp avocado or melted coconut oil
1/2 tsp sea salt
2 Tbsp curry powder (or store-bought)
1/2 tsp garam masala
FOR SERVING
2-3 cups kale (or other green)
1/4 cup tahini, DIVIDED (or sub Lemon Tahini Dressing, Green Curry Tahini Dressing, Mango Chutney, or Green Chutney)

Vegan Roasted Mushroom Cauliflower Soup

Ingredients:
8 oz cauliflower, cut into florets and thinly sliced
1 lb shiitake mushrooms, woody stems removed and thinly sliced
3 Tablespoons/45ml extra virgin olive oil (divided use)
1 teaspoon ground coriander
4-6 branches of fresh thyme, stems removed
1 teaspoon fine sea salt (divided use)
4 cups
.5 of mixed dried mushrooms <–sub more fresh?
.5 oz raw cashews (plus water to soak)
1 clove of garlic, finely minced
½ a leek (white parts only), finely chopped
Freshly ground black pepper to taste

Paleo Zucchini Lasagna with Sausage

Ingredients:
cheese sauce:
2 cups cashews
3/4 cup almond milk
2 Tbsp avocado oil or olive oil
4 cloves garlic
1/4 cup fresh lemon juice
1/4 cup nutritional yeast
1 1/2 tsp fine sea salt
lasagna:
4-5 med-large zucchini
14 oz Turkey Sausage thawed and chopped into small pieces*
1 small onion diced
3 cloves garlic minced
Sea salt and black pepper
Crushed red pepper (optional)
1 tsp Italian seasoning
1-2 cups fresh spinach or kale chopped (optional)
2 cups marinara sauce divided
1/4 cup Fresh basil and parsley chopped
