Tip of the week: Did you know carrot tops actually pull moisture from your carrots? Make sure to top your carrots before they go into the fridge.

The Big Vegan Bowl

Ingredients:
1 large sweet potato, chopped into 3/4-inch cubes
1 (15-ounce) can chickpeas, drained and rinsed (about 1.5 cups)
1 cup uncooked quinoa
1 large carrot, peeled & julienned
purple cabbage or vegetable of choice, shredded
couple handfuls of greens for the base (optional)
lots of hummus
sliced avocado
hulled hemp seeds

Twice-Baked Quinoa-Stuffed Butternut Squash

Ingredients:
1 medium butternut squash (mine was about the length of my forearm), cut in half and seeds removed
1/2 cup quinoa
1 cup low-sodium vegetable broth
1 cup loosely packed shredded baby kale or spinach
1 cup diced celery
1 apple, cored and diced
1/4 cup dried cranberries or cherries
2 tablespoons minced parsley
1 tablespoon minced sage
2 tablespoons apple cider vinegar
2 teaspoons olive oil
1/8 teaspoon black pepper

Creamy Vegan Arugula Soup

Ingredients:
1 tablespoon extra-virgin olive oil
1 yellow onion, chopped
2 stalks celery, chopped
3 cloves garlic, minced
1 pound yukon gold potatoes, chopped into 1-inch chunks
4 cups water or vegetable broth
1 1/2 teaspoons fine sea salt
3 cups fresh arugula
1/2 cup coconut milk
Freshly ground black pepper

Spinach & Arugula Breakfast Hash

1 gold potato, diced
½ onion, diced
2 tablespoon olive oil
1 cup spinach & arugula
