I had some cucumbers building up in my fridge over the past few weeks of CSA boxes. My mom stopped by to help out with the baby and showed me something really cool (especially in the heat of Buellton) to do with these delicious cukes. She just partially skinned them, sliced them up, and plopped them in the following brine: 2/3 vinegar to 1/3 water (my mom suggests white vinegar, but I like apple cider), 1 tsp sugar, salt to taste, chopped onions and herbs (like dill or parsley). What I didn’t eat immediately we stuck in the fridge to crisp up overnight leaving a very nice side dish to many meals, or just a cool thing to snack on for days to come.

Comforting Creamy Broccoli Soup

Ingredients:
1 large leek, white and light green parts, washed and sliced
1/2 small white onion, chopped
1 lb broccoli crowns, chopped
4 cups chicken broth
1 cup full-fat coconut milk
1 tbsp ghee
2 cloves garlic, chopped
1/2 tsp sea salt
1/4 tsp black pepper

Roasted Broccoli Salad with Lemons and Almonds

Ingredients: Serves 4-6
2 heads of broccoli
1 teaspoon olive oil
1/2 teaspoon sea salt
1/2 cup almonds
1/4 cup dried cranberries or raisins
1 tablespoon chopped fresh dill
4 very thin slices of lemon, each cut into 8 tiny triangles – whatever you change about this recipe make sure you don’t leave out the lemon slices. They’re the best part!
For the lemony dressing
¼ cup fresh squeezed lemon juice (from about 1 lemon)
4 teaspoons honey
1½ teaspoons Dijon mustard
1 teaspoon balsamic vinegar
1 garlic clove, grated on a Microplane or very finely minced
2 tablespoons extra virgin olive oil

Smashed White Bean, Basil, & Avocado Sandwich

Ingredients: Serves 3-4
1 heaped tablespoon whole grain dijon mustard
salt and pepper to taste
1 15 oz can white beans, drained and rinsed
1 avocado, sliced
juice of half a lemon
2 tablespoons fresh basil leaves, finely chopped
for the sandwich (optional): baby spinach, romaine, arugula, tomato slices
