Week of June 8th

My dear Community,

The price of our wax cardboard boxes seem to keep rising like the price of gas. Our average box price is over $3. Friendly reminder to please return your box each week or as often as you possibly can. Take a minute to watch our “how to break down a box” video here. You shouldn’t have to struggle or rip the box to collapse it. Do your best to keep them out of prolonged direct sunlight as it melts the wax. Both of these render the box useless. We use the wax boxes because they last longer, but they cannot be recycled.

I had a chance to visit the Terrace Foundation. They grow hydroponic food towers, microgreens and have an organic garden as well. Their mission in my own words is to feed the surrounding low income and elderly communities families nourishing foods. They provide the cafeteria fresh produce to make low cost meals available for the elderly. They also educate elementary through high school students and empower individuals to grow their own food enabling food freedom. I’m going to start including their microgreens, which pack an impressive nutritional punch into our CSA boxes from time to time and into our CSA store by next week. By supporting this foundation we not only get a plethora of crunchy greens to top our meals, but we’re also supporting a local foundation which is serving OUR community.

6-Ingredient Paleo Zucchini Lasagna (Dairy-Free + No Noodles)

Ingredients:
1 tablespoon avocado oil
1 small onion, chopped
1 lb grass-fed beef (or any ground meat you’d like!)
1 24-ounce jar of organic tomato sauce
3 large organic zucchini
Ricotta or Mozzarella (recipe suggests fake cheese which you can totally use, but I prefer the real deal if I’m going to use cheese)
Topping: organic basil, nutritional yeast, anything!

Snap Pea Salad with Zesty Lemon Vinaigrette

Ingredients:
2 Tbsp lemon juice
2 Tbsp olive oil
1 clove garlic, minced or grated
1 ½ tsp Dijon mustard
1 tsp maple syrup (or honey if not vegan)
2 Tbsp finely chopped shallot (optional)
1/2 tsp sea salt (plus more to taste)
1/4 tsp black pepper
SALAD
4 cups thinly sliced sugar snap peas, ends trimmed, sliced at a diagonal
1/4 cup chopped fresh basil (plus more for garnish // or sub tarragon or mint leaves)
1/4 cup roughly chopped roasted salted pistachios (plus more for garnish // or sub other roasted salted nut or seed of choice)
1/8 -1/4 tsp crushed red pepper flakes (optional)

Spicy Fish Tacos with Beet Slaw

Ingredients:
3/4 lb tilapia (or another white fish)
1 tablespoon taco seasoning
2 tablespoons oil olive, coconut, avocado
4 medium Paleo Tortillas (your choice, read above for options, lettuce wrap for Whole30)
1 medium avocado
Slaw
1 cup beets (spiralized or julienned)
1 medium jalapeno (thinly sliced into strips)
1/2 cup white onion (spiralized or julenned)
1 handful Fresh cilantro (minced)
1 medium lime (juiced)
sea salt (to taste)

Spinach & Herb Cauliflower Rice Pilaf

Ingredients:
4 cups cauliflower, riced
3 tablespoons olive oil
2 cloves garlic, crushed
1 tablespoon butter
salt & pepper to taste
2 cups baby spinach leaved chopped
10 basil leaves chopped
¼ cup roasted almond slivers optional
