Week of March 21st

Please be cautious if you are picking up at the farm when it’s raining (or has recently rained). The farm becomes one big mud puddle.

Tip of the week: Remove the tops from your carrots and radishes when you receive them. The tops actually suck the water out of the vegetables and will leave them limp. That goes for the extra leaves on the cauliflower as well as beet tops.

Paleo Cauliflower and Spinach Breakfast Bread

Ingredients:
Touch of Coconut Oil – for saute
1 Cauliflower
½ Onion – Diced
1 Cup Spinach – Fresh or frozen
½ Cup Nuts – Ground (optional)
2-3 Free Range Eggs
1-2 Cloves Garlic – Crushed
Any herb of choice, fresh or dry – Optional
Freshly Ground Sea Salt and Black Pepper

The Best Kale Cabbage Slaw

Ingredients:
2 cups shredded kale
2 cups shredded carrots
2 cups shredded purple/red cabbage
1/4 cup apple cider vinegar
1 tablespoon raw cane sugar

Roast Beetroot Falafels with Tahini Sauce

Ingredients:
2 beetroots (just under tennis ball size)
2 large garlic cloves
250g (2 cups) cooked chickpeas
1 handful fresh coriander leaves
1 tablespoon ground coriander
1 heaped teaspoon ground cumin
1 teaspoon sea salt

Strawberry Beet Smoothie

Ingredients:
1 cup chopped raw beets (peeled)
1 cup frozen strawberries
1 banana
1 cup dairy free milk
Juice of 1/2 lemon
1/2-1 inch fresh ginger (peeled) (start with 1/2 inch, you can always add more if you want it spicier)
1 tbsp flax seeds
1 tbsp hulled hemp seeds
1/2 tsp cinnamon
