My dear Community,

We don’t have the means for a lot of advertising. As a small business we rely on word of mouth from happy customers. As a thank you, we offer a $30 referral credit if a new community member signs up for at least 3 boxes.

Eating fruits and veggies feels a lot easier when they’re grown with flavor in mind and picked at the peak of harvest. I spent the first 15 years of my life in Germany where my father was employed by the US Government. My mom shopped at the American stores on the base where all the food was imported. I grew up thinking vegetables were the enemy – and perhaps the vegetables I was eating were. Picked well before they were ready, grown commercially, shipped across the world and sitting on shelves for who knows how long before we even got them home. I still find that most produce in the grocery store resembles what I grew up with. When I met my husband over 13 years ago I was blown away by the flavor of the produce on from John Givens farm. As I started replacing processed foods with more whole, plant based foods my world began to shift. Feeling more connected with the earth, gratitude for and a healthier relationship with food and spending a lot more time outside. It’s my passion to spread the word about eating local, organic, nutrient rich food. If you’re feeling inspired, I hope you can help.

French Potato Salad

Ingredients:
dressing
1/4 cup extra virgin olive oil
3 Tbsp grainy Dijon mustard
2 Tbsp Sherry vinegar
1 shallot, finely minced
2 cloves garlic, minced very fine
pinch of salt, to taste
salad
2 lbs small fingerling potatoes
salt
1/3-1/2 lb green beans, trimmed and cut in half
1/2 cup finely chopped fresh parsley
2 tsp fresh thyme leaves, or more to taste
1/4 red onion, slivered
freshly cracked black pepper to taste

The BEST Kale Salad (with Lemon Miso Tahini Dressing)

Ingredients:
2 cups chopped kale (~ 4-5 stems of kale)
½ an avocado
1 tsp nutritional yeast optional
sliced almonds
Lemon Miso Tahini Dressing
1 tbsp lemon juice
2 tbsp tahini
¼ tsp garlic powder
½ tsp paprika
1 tsp white miso
2.5 tbsp water *adjust according to your liking
Crispy Chickpeas
1 cup canned chickpeas
1 tsp smoked paprika
½ tsp tamari
light drizzle of olive oil
Roasted Sweet Potatoes (consider subbing butternut from last week or carrots)
½ tbsp curry powder
½ tsp red chili powder
sea salt
¼ tsp black pepper
light drizzle of olive oil

Greek Nachos with Hummus

Ingredients:
3 pita pockets – cut into 8 wedges (or you can use store bought pita chips)
1 teaspoon cumin
Salt and pepper (to taste)
Olive oil for drizzling
¾ cup hummus
1 cup feta cheese (cut into small cubes)
1/2 cup Kalamata olives (chopped)
½ cup cherry tomatoes (halved)
½ cup sliced pepperoncinis
1/4 red onion (chopped)
¼ cup flat leaf parsley (chopped)
Tzatziki:
2 cloves garlic minced
1 Tablespoon lemon juice
2 teaspoons white wine vinegar
1 Tablespoon extra virgin olive oil
1 ¼ cups plain Greek yogurt
1 medium cucumber
Salt and pepper (to taste)

Seriously, The Best Healthy Turkey Chili

Ingredients:
2 teaspoons olive oil
1 yellow onion, chopped
3 garlic cloves, minced
1 medium red bell pepper, chopped
1 pound extra lean ground turkey or chicken
4 tablespoons chili powder
2 teaspoons ground cumin
1 teaspoon dried oregano
1/4 teaspoon cayenne pepper
1/2 teaspoon salt, plus more to taste
1 (28-ounce) can diced tomatoes or crushed tomatoes
1 1/4 cups chicken broth
2 (15 oz) cans dark red kidney beans, rinsed and drained
1 (15 oz) can sweet corn, rinsed and drained
For topping: cheese, avocado, tortilla chips, cilantro, sour cream
