Cinnamon Apple Quinoa Salad

ingredients: Serves 4
1 cup cooked quinoa, cooled
½ medium gala apple, diced
¼ cup dried tart cherries
1 cup spinach, chopped
¼ cup pecans, chopped
¼ cup diced red onion
¼ cup crumbled feta cheese
1 tablespoon apple cider vinegar
1 tablespoon olive oil
½ teaspoon cinnamon
salt and pepper to taste

Parmesan Tomato and Zucchini Gratin

Ingredients:
1 zucchini, thinly sliced
3 medium tomatoes, thinly sliced
1/2 medium onion, chopped
1 clove garlic, minced
1/4 cup shredded parmesan
Salt and pepper to taste

Skinny Enchilada Stuffed Bell Peppers

Ingredients:
5 large bell peppers, I used and array of different colors
1.5 pounds ground turkey
15 oz. can black beans, drained and rinsed
1 cup corn
2 cups shredded cheddar cheese
10 oz. can enchilada sauce
1 teaspoon cumin
1 teaspoon salt
