Week of September 8th

My Dear Community,

Some carrots don’t quite fit (literally) in the bunch. They are a little too curvy, short or tall so don’t make the uniform cut. We like to include these “carrots with character” in our mix from time to time. The plus is you get more carrots but the downside is no tops, or greens. They’ll be back soon though. Green zucchini is back and raspberries are going strong this week. The berries seemed to ripen all at once this year so this week is definitely one to take advantage of if you want to add a clamshell or two to your box. I hope you all are enjoying this Labor Day weekend. Holidays tend to skip my radar as the farm never seems to quit churning.
An important note about cherry tomatoes: remember to sort through these lil guys as soon as possible. Their thin skins make them vulnerable to cracking soon after they’re picked. With them going into the boxes within 12 hours of picking, it’s hard to sort all of them so it’s inevitable some will land cracked in your bag. Sorting them out immediately will keep the rest of them from going bad by association.

Mini Pepper Nachos

Ingredients:
2 small packages mini peppers
1 pound ground turkey – vegan alternatives included
1/2 tsp. garlic powder
1 tsp. ground cumin
1 tbs. chili powder
1/2- 1 cup organic salsa
pinch salt
2 tbs. chopped fresh cilantro
non-stick spray

Garden Herb White & Green Bean Salad

Ingredients:
1 can cannellini or white kidney beans 540 ml can, drained and rinsed
1 lb green beans trimmed and cut in half
1/2 cup red onion thinly sliced
1/3 cup olive oil
3 tbsp red wine vinegar
1 tsp garlic minced
1 tsp dried oregano
1 1/2 tsp fresh parsley finely chopped
1 1/2 tsp fresh basil finely chopped
1 tsp fresh rosemary finely chopped
3/4 tsp salt

3-Ingredient Cantaloupe Smoothie

Ingredients:
2 1/2 cups cantaloupe , cubed
1/2-3/4 cup canned coconut milk
2 tsp honey
handful of ice

Mediterranean Zucchini, Tomato and Feta Salad

Ingredients:
2 medium sized zucchini, thinly sliced into half moons
2 medium sized yellow squash, thinly sliced into half moons
1 cup cherry tomatoes, halved
1/4 cup kalamata olives, chopped
2 ounces feta cheese, cubed or crumbled
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh mint
1 teaspoon lemon zest
3 tablespoons fresh lemon juice
1 tablespoon olive oil
1/4 teaspoon granulated garlic
Kosher salt and fresh ground black pepper to taste

2 teaspoons cornstarch
1 teaspoon smoked paprika
1/2 teaspoon cumin
