Ingredients:
2 medium cucumbers, sliced
3 to 4 firm tomatoes, quartered, then sliced
1/2 cup thinly sliced fresh basil
1 to 2 cloves fresh garlic, finely chopped (I usually use 4)
2 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
sea salt and freshly ground black pepper to taste
Optional Additions:
kalamata olives
chopped or thinly sliced red onion
feta cheese
Directions:
Place all ingredients into a large bowl and gently toss together. Add salt and pepper to taste, toss again. Salad is best served about 1 hour after it has been made.
