Cynthia's Green Pesto

This recipe is from CSA member Cynthia, who says, "I spread this on salmon fillets and saute them until the pesto is crisp and the fish is cooked."


2 cups any greens you have on hand -- parsley,cilantro, spinach, kale, chard, basil, etc. (preferably organic)
1/2 cup parmesan cheese
1/3 cup walnuts
2 cloves of garlic

Put all of the above in a food processor until pureed. Slowly add 1/2 cup good quality olive oil until well blended.
