My dear Community,

Every CSA box is like a little reset. It’s easy to get caught up in busy days, wondering what’s for dinner or reaching for whatever’s fast. But this box offers a chance to pause, peek inside, and let the contents guide you.

Take a few minutes to assess what's inside:

What needs to be eaten first? Arugula and lettuces are more delicate and always best enjoyed fresh!

What simple meals can come together? Sauté spinach with garlic for a quick side, toss arugula right into a salad, or roast the cauliflower while you prep the rest of dinner. The snap peas are crisp and can hold a few days — perfect for snacking as the week goes on.

For me, unpacking the box at the end of a Wednesday has become its own little ritual. On a week when I can slow down- washing and prepping the veggies for the days ahead, and tucking them into the fridge feels almost meditative. It’s a moment to offer gratitude — for the food, the farm, and the nourishment ahead. Of course, not every week is like that. Some weeks are crazy and everything just gets thrown into the fridge. And that’s okay too. The beauty is, no matter what, the nourishment is there waiting when we’re ready — giving us another chance to come back to what’s simple and good.

Arugula, Strawberry & Sugar Snap Pea Salad

Ingredients:

Dressing

1 tablespoon extra-virgin olive oil

1 tablespoon white balsamic vinegar OR red balsamic vinegar

1 tablespoon fresh-squeezed lemon juice

½ tablespoon water

⅛ teaspoon grated lemon zest

1/16 teaspoon salt (I fill my ⅛ teaspoon about halfway)

1/16 teaspoon black pepper

Salad

6 to 8 cups arugula leaves

1 cup sliced strawberries

1 to 1 ½ cups sugar snap peas

Garnish

4 tablespoons thinly sliced fresh basil

4 tablespoons fresh torn mint leaves

Cabbage Stir Fry

Ingredients:

3 Tbsp avocado oil

1 head green cabbage sliced

4 large cloves garlic minced

1 Tbsp fresh ginger peeled and grated

1/2 tsp ground cumin

3 Tbsp liquid aminos or coconut aminos, to taste

2 large carrots grated

2 leeks sliced

Roasted Cabbage and Snap Pea Salad

Ingredients:

Salad

1/2 head of red cabbage, sliced

1 head of cauliflower, chopped into florets

1 cup of cooked quinoa*

2 handfuls of arugula or mixed greens

1 handful of mint, finely chopped

2 stalks of celery, sliced

1 cup of snap peas, sliced

2 dates, pit removed and chopped

1/4 cup raw almonds

Dressing

6 Tbsp extra-virgin olive oil

1 small lemon or half of a large lemon, juiced

1 pinch of sea salt

Carrot Paleo Chocolate Chip Cookies

Ingredients:

1/4 cup melted coconut oil

2 large eggs, room temperature

1/4 cup maple syrup or honey

1/3 cup unsweetened applesauce

1 teaspoon vanilla extract

2 cups almond meal

2/3 cup tapioca starch

2 teaspoons cinnamon

1 teaspoon baking powder

1/4 teaspoon salt

2 tablespoons ground flax meal

1 cup grated carrots

1/3 cup chocolate chips

Sausage, Leek, and Spinach Quiche {Paleo, Whole30}

Ingredients:

1 large sweet potato

1 Tbsp ghee or coconut oil plus sea salt for roasting potatoes

3/4 lb Pork Sausage

1 Tbsp ghee or coconut oil

2 large leeks white and very light green parts only, sliced thin

Sprinkle of salt

1 Tbsp water

7 oz fresh baby spinach chopped

7 large eggs

1/4 cup organic coconut milk full fat, blended before adding

1/2 tsp fine grain sea salt

2 Tbsp nutritional yeast optional*

1/8 tsp black pepper
