Week of April 3rd

My dear Community,

Hope everyone had a nice, albeit rainy and cold weekend. The local mountains even received some snow! We’re picking strawberries for our CSA boxes from our farm, John Givens, this week, but they should be eaten pretty quickly. As if you needed a reason to eat them right away. We’re still on the coattails of the winter season and this is prime time to reach out to neighboring farms to supplement our CSA program to have the variety we have come to rely on here in Santa Barbara County.

Lemon Blueberry Avocado Smoothie

Ingredients:
1 lemon (zest from whole, juice from half)
2 cups almond milk, unsweetened (or other plant-based milk)
2 cups blueberries, fresh or frozen
1/2 cup avocado chunks, fresh or frozen
1/2 cup plain greek yogurt
1 tsp vanilla extract
2 Tbsp chia seeds
1/4 tsp cinnamon
Optional: unflavoured or vanilla protein powder or collagen powder
Ice, until desired temperature reached (if not using frozen ingredients)

Quick Citrusy Cabbage Slaw (Mayo-Free)

(This would be a great recipe to add in chopped broccoli!)
Ingredients:
1/2 tsp lime zest
4 cups shredded / thinly sliced red cabbage (or sub other type of cabbage // we measured slightly heaped cups)
3/4 cup finely chopped / shredded carrot
1/2 cup finely chopped red or white onion
1 ½ Tbsp lime juice
1/2 tsp ground cumin
1/4 tsp garlic powder
1 tsp olive oil (if oil-free, omit)
1 tsp maple syrup
1/2 tsp sea salt
FOR SERVING optional
Freshly chopped cilantro

Savory Paleo Crepes with Roasted Asparagus

Ingredients:
Paleo Crepes:
4 large eggs
1 cup unsweetened almond milk
1 cup finely ground almond flour
1/2 cup tapioca flour
1 pinch sea salt
Crepe Filling:
2 Tbsp algae oil or avocado oil
1 bunch asparagus
5 ounces baby spinach
1 pinch sea salt, to taste
1/2 cup feta cheese crumbles

Vegan Beet Brownies (Gluten Free, Paleo)

Ingredients:
1 cup pitted dates
1 cup chopped cooked beets*
¼ cup avocado oil
1 tsp vanilla extract
½ cup blanched almond flour
¼ cup cocoa powder
¼ tsp salt
5 oz dark chocolate (65-75%)
