Apple & Quinoa Stuffed Kohlrabis

Ingredients:
4 Kohlrabis
1/2 cup Quinoa
1 cup Apple Cider
1 1/2 cup Water
1/4 teaspoon Salt
1 Apple, finely chopped
1/2 Onion, finely chopped
1/4 cup Raisins
1/4 cup toasted Pine Nuts
1 tablespoon Coconut Oil

Kohlrabi & Cabbage Slaw with Tahini-Lemon Dressing

Ingredients:
1 medium sized kohlrabi, stems and greens removed
1/2 a head of green cabbage
1 large bunch of parsley, roughly chopped
1 cup raisins
1 small ripe avocado, diced
1/4 teaspoon crushed red pepper flakes
salt and pepper to taste
For the Tahini-Lemon Dressing:
1/4 cup tahini
2-3 Tablespoons fresh lemon juice
1 teaspoon lemon zest
2 teaspoons honey
1 clove of garlic, minced
a small handful of very finely minced parsley
3 Tablespoons water + more to thin if necessary
pinch of crushed red pepper flakes
salt and pepper to taste

Soba Noodles + Ginger Tahini with Crispy Kale, Shallots + Romaine

Ingredients:
for the tahini:
1/3 cup of tahini
1/3 cup of water
1/2 teaspoon of salt
2 heaping teaspoons of grated ginger
1 clove of garlic, pressed
1/4 cup of lemon juice
1 teaspoon of tamari
2 teaspoons of toasted sesame oil
pepper + red pepper flakes (optional) 
a package of soba noodles
a drizzle of grapeseed (or another neutral tasting, high-heat oil)
1 shallot, thinly sliced 
5-6 leaves of kale, stems removed and roughly chopped
4-5 romaine leaves, roughly chopped
1 green onion, thinly sliced
some sesame seeds or gomacio  (which is a sea salt and sesame seed blend)

Ingredients:
4 teaspoon apple cider vinegar
1 tablespoon extra virgin olive oil
1 tablespoon honey
1/8 teaspoon salt
pinch of black pepper
2 large carrots , scrubbed, peeled and coarsely grated
1/2 cups head of red cabbage , finely chopped (about 2 )
2 cups raw kale , finely chopped
1 large apple , peeled, cored and diced
1 tablespoon lemon juice
1 cup slivered almonds
1 cup Craisins Blueberries
