Week of January 31st

My dear Community,

I’m bracing for the next storm in Buellton (and SB). I’m covering everything with tarps and we’ll see what comes next week. Please give yourselves and others a little extra time to get what you need done as the rain brings us renewed blessings. It’s always extra tricky to navigate our CSA production in the rain, but we’re on rain or shine. I asked our tangerine grower to pick everything they had so we can enjoy the fruit a while longer. 

We’re starting a major revamp on our chicken program. I just ordered 175 baby chicks whose breeds lay some very cool colored eggs. The chickens are coming on Valentines Day and with luck will be in full swing by July and producing through the colder months. It’s a constant battle to keep predators at bay and I feel like I’m on the losing side of it most years. It just takes one off night when I forget to make sure all the birds are in the coop before I lock it up. But I feel dedicated to continue on (improving every time) as a way of providing truly free range, organic eggs from chickens who are able to live their best chicken life. 

Check out our store for local/organic sourdough bread, local walnuts, our strawberry preserves and chanterelle mushrooms this week! We were unable to deliver chanterelles last week, but we are back in supply.

Rosemary White Bean Tomato Soup

Ingredients:
1 tablespoon olive oil
1 onion, roughly chopped
2 garlic cloves, minced
Pinch of red pepper flakes
1 teaspoon kosher salt
1/2 teaspoon black pepper
1-15 ounce can white beans, drained and rinsed (cannellini beans, navy beans or great northern beans)
1-28 ounce can diced tomatoes (sub two cups chopped fresh tomatoes)
4 cups low-sodium vegetable broth
2 sprigs fresh rosemary
1 Parmesan rind, optional
1 cup roughly chopped kale leaves
Shaved Parmesan and chopped parsley for serving

Asian Brussels Sprout Salad

Ingredients:
1 lbs brussels sprouts (5-6 cups shredded)
1 medium red or yellow bell pepper <– consider raw broccoli
2 carrots julienned or shredded
3/4 cup thinly sliced scallions
2/3 cup chopped cilantro
1/2 cup chopped salted cashews or peanuts
2 tbsp sesame seeds
Dressing
1/4 cup almond butter or cashew butter
1 tbsp lime juice
2 tbsp apple cider vinegar
2 tbsp sesame oil
3 tbsp coconut aminos (or tamari/soy sauce)
2 inch ginger root
2 cloves garlic
2 tsp honey (or 2 medjool dates if doing Whole30)

Cauliflower Kale Detox Salad

Ingredients:
1/2 head of cauliflower grated with a box cutter
1 cup kale chopped (small)
1/2 cup parsley chopped (small)
3 carrots grated
1/4 cup sliced almonds
4 Tablespoons pomegranate seeds
1 broccoli head chopped (small)
Salad Dressing
2 Tablespoons tahini
2 Tablespoons lemon juice freshly squeezed
1 Tablespoon extra virgin olive oil
1 Tablespoon water
1 pinch sea salt
1/4 teaspoon black pepper freshly grated
1 Tablespoon freshly grated ginger
