Week of March 6th

My dear Community, 

I hope this message finds you well and cozy after the last storm. While rain around here is almost always welcome, it also presents challenges on the farm, particularly when it comes to planting new crops in muddy conditions. Nevertheless, we’re adapting to the elements and finding innovative ways to keep farming. I’m seeing signs of our strawberry crops starting to produce so in about a month we’ll be back in the berry business.

I’m excited to share that we’ve set up a new chicken run in part of our orchard! We recently adopted a huge chicken house, which will soon be home to our newest flock of 175 chickens. Our current laying flock is thriving, and we’ve started adding subscriptions for our truly organic and pasture-raised eggs to those on the waiting list. If you’re interested in receiving a dozen of our delicious eggs, please let us know.

Despite the seasonal obstacles, we’re honored to present you with this week’s box of winter veggies. Thanks for trusting us to feed you. Each item has been harvested within 24 hours of making your box with loads of love and care. We hope these fresh, nutritious goodies bring joy and nourishment to your table.

Chili Stuffed Delicata Squash

Ingredients:
FOR THE SQUASH:
1 tablespoon extra virgin olive oil
4 delicata squash halved lengthwise, seeds removed
salt and pepper to taste.
FOR THE CHILI:
1 tablespoon extra virgin olive oil
1 yellow onion chopped
1 clove garlic minced
1 lb. lean ground turkey
2 tablespoons chili powder
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 teaspoon dried oregano
1 cup fresh or frozen corn
15 ounces tomato sauce
15 ounces black beans rinsed and drained
1/4 cup chopped fresh cilantro
1/2 lime juiced
Top with cheese and extra cilantro optional

Thai Quinoa Salad with Ginger Peanut Butter Dressing

Ingredients:
For Ginger Peanut Butter Dressing:
1/3 cup peanut butter
3 Tbsp tamari or soy sauce
1 Tbsp lime juice
1 tsp freshly grated ginger
1 Tbsp honey or maple syrup
1 Tbsp rice vinegar
1 tsp sesame oil (optional)
pinch of red pepper flakes
For the salad:
1 cup uncooked quinoa
1 small head of cabbage, chopped
1 red sweet pepper , thinly sliced
1 shredded carrot
1/4 cup chopped cilantro
2 Tbsp chopped chives
chopped peanuts, for serving

Mexican Avocado Egg Salad Wraps

Ingredients:
For the Avocado Egg Salad:
6 hard-boiled eggs
½ large avocado, diced (equivalent to ½ cup)
1 small bunch cilantro, chopped
3 ounces fire-roasted green chilies (canned, drained)
2 garlic cloves (1 teaspoon minced)
¼ teaspoon paprika
½ teaspoon cumin
dash of lime
⅓ cup red or green onion, chopped
Salt to taste
Black pepper to taste
For the Lettuce Wraps:
5 large collard greens
Egg salad (above)
1 bell pepper, diced
1–2 jalapeños
Salt to taste
Fresh black pepper to taste
1 Fresh lime and juice
Optional garnishes: chopped cilantro and/or spicy sprouts

20-Minute Spinach Blueberry Salad

Ingredients:
4 cups baby spinach
2 cups fresh blueberries
1 cup raw walnuts
1 medium-large avocado (cut into chunks)
1/2 cup goat cheese (crumbled)
1/4 cup fresh mint (torn into small pieces)
Salt + pepper, to taste
Balsamic Vinaigrette:
1/4 cup olive oil

1/2 a lemon, juice only
1 tsp garlic powder (or 2 cloves fresh garlic, minced)
