Week of Thanks Givens

My dear Community,

I can’t help but let my thanks overflow this week for so many things, but especially for the community that helps keep this CSA program running. Our CSA van died a few weeks ago and our wonderful mechanic Tom took his own time to replace the water pump and get our 10+ year old van running (and even passing smog). Many thanks to the people who host pick up sites and ensure our box distribution runs smoothly. Of course, a huge thanks to the farm workers who are out in the fields 6 days a week, planting, tending and harvesting our food to eat. Sending love to my CSA staff who show up every week to help put our boxes together. There’s so many moving parts that go into making our program run each week, which includes YOU supporting local, organic food grown with the soil in mind. 

We have great seasonal items like local walnuts in shell, brussels sprouts, broccoli, sweet potatoes, persimmons, sourdough bread, strawberry jam and more in our CSA store if you’d like any additional items for your lineup this week without waiting in line. 

Thanks again for being part of our program. We couldn’t do it without you.

Paleo Scalloped Sweet Potatoes

Ingredients:
1 Tbsp avocado oil
1 medium onion chopped*
5 cloves garlic minced*
1 large head cauliflower chopped into florets
1 cup vegetable broth or chicken broth
1/4 cup ghee or grass-fed butter**
1/4 tsp ground nutmeg
2 tsp sea salt
3 sprigs fresh thyme
3 large sweet potatoes about 3.25 pounds

The Creamiest Mashed Cauliflower

Ingredients:
1 large head of cauliflower, or 2 small heads – about 7 cups total when chopped
3 tablespoons ghee or olive oil
3/4 teaspoon sea salt
2 cloves garlic, chopped
1/4 cup non dairy milk, broth or water (if you don’t have quite enough cauliflower as the recipe calls for, reduce the liquid by half, and add more if needed when blending)
Salt and pepper to taste

Roasted Brussel Sprouts and Carrots

Ingredients:
1 tbsp olive oil
1 tbsp dijon mustard
1.5 tbsp apple cider vinegar
1.75 tsp salt
1 tsp garlic powder
1 tsp dried thyme
1 pound brussel sprouts
1 pound carrots

Keto Cauliflower Stuffing with Sausage

Ingredients:
1 large head cauliflower cut into small florets
2 Tbsp avocado oil or olive oil
Sea salt and black pepper
1 Tbsp ghee and more as needed
1 lb bulk Italian sausage sugar free for Whole30, homemade or store bought
1 medium yellow onion cut in half and sliced thin
4 stalks celery chopped (sub or add mushrooms)
4 cloves garlic minced
1 Tbsp fresh rosemary minced
2 tsp fresh sage minced
2 tsp fresh thyme leaves removed from stems
1 Tbsp fresh parsley minced, plus more for garnish if desired
1/2 cup pecans chopped
Sea salt and black pepper to taste

“Cheesy” Paleo Broccoli Casserole

Ingredients:
2 lbs broccoli florets about 8 cups
1 tbsp coconut oil
1 onion chopped
4 garlic cloves minced
Parsley flakes for garnish
“Cheese” Sauce
1 1/2 cup full-fat coconut milk
1 cup raw cashews
3/4 cup nutritional yeast
1/3 cup apple cider vinegar
2 tbsp dijon mustard
1 tsp onion powder
2 tsp sea salt
1/2 tsp ground black pepper
1/2 tsp smoked paprika
2 eggs
