Week of December 14th

There will be no CSA shares made for the next two weeks, Dec 21st-29th. We will resume the first week of the new year. Happiest holidays to you, your family and all your loved ones. We feel so blessed to have you guys in our community supported agriculture program and connected with all the fresh food we have to offer. We are looking forward to starting off 2017 with tons of delicious, healthy vegetables and recipes. We will be making another donation to the Organic Soup Kitchen this week. Giving back to the community is our goal.

Kohlrabi, Cabbage and Apple Slaw

Ingredients:
1 tablespoon olive oil
juice from 1/2 lemon
1/2 teaspoon turmeric
1 teaspoon whole grain mustard
2 teaspoons honey
1 teaspoon finely grated ginger
1 kohlrabi, julienned
2 cups shaved purple cabbage
1 granny smith or golden delicious apple, quartered and thinly sliced
2 teaspoons minced cilantro
1 teaspoon black sesame seeds

Massaged Kale with Persimmon, Pomegranate and Pistachio

Ingredients:
2 large bunches kale
1 tablespoon maple syrup
3 tablespoons fresh lemon juice
1/3 cup extra virgin olive oil
1/4-1/2 teaspoon sea salt
2 firm, but ripe, Fuyu persimmons, peeled and sliced into thin wedges, then cut in half
1/3 cup fresh pomegranate arils
1/3 cup coarsely chopped, roasted and salted pistachios

Kid-Friendly Stuffed Butternut Squash

Ingredients:
1 butternut squash
1/2 cup plain breadcrumbs
1 small clove garlic
1 cup fresh spinach
1 tablespoon butter
1/4 cup fresh grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon Italian seasoning
1/2 cup water
1/2 cup Parmesan cheese
